Baking time once again! This time I was in the cookie baking mode =) I was baking for various reasons this time....I actually did two baking rounds..in two consecutive days. One reason...my pregnant sis (the one who recently got married is expecting, btw =) so happy are we!!) was craving that night for some home-baked cookies...two..to give to the cutie nephew of my friend (please read my coffeebean post on the"mini-mag light incident")....3 to to give as a gift for somebody...and lastly to bring to Oli's house because he is recovering from his torn achilles tendon...and to share with our friends for pizza night at his place =)
Well, I always want the food I make healthy. I used a very nice basic oatmeal cookie recipe and teaked it a bit to make them into something nutrious and fun to eat =)
My first batch of cookies...was chocolate-oatmeal-chocolate chip- raisin-fitness =) I added 1/2 c cocoa powder to the basic oatmeal cookie recipe and added coffee to pump up the flavor. I love chocolate and coffee =) I added oatmeal, chocolate chips, chopped raisins and Fitness cereal! =) Makes for a nice chocolatey and fibre rich treat!
The second batch I made was chocolate-oatmeal-chocolate chip-raisin-cranberry-walnut ones. I took out the cereal and replaced it with more whole rolled oats and added some chopped dried cranberries and walnuts, in addition to all other add ons I put in frommy first =) I love dried cranberries!
Well, they turned out pretty good. Moist, soft and chewey cookies...rich in fibre and deinitely yummy!
They both look they same when done...so here they are =)
